I cook a lot too. And over the past few months buying better cuts of meat, I've arrested development style realized I've made a huge mistake. I haven't been properly searing, haven't been letting it rest, haven't been buying the right cuts... and I feel like a horse's ass. The steak I cooked tonight was so much better than all the rest, I wonder what else I've been doing wrong...

Right is in the eye of the beholder, eg All those cooking videos basically drench the steak in butter which is gross to me and makes it way too rich; the steak is already juicy without bathing it in butter.

Other times I enjoy cooking it with some delicious garlic mushrooms

Mushrooms are my go to steak accomplice; the virtue of grilling is you don't need butter, but pan fried something has to keep the steak greased. I never use more than a half a tablespoon to cook a steak. If you pansear, then finish with cast iron you can probably use even less.

Argh I always watch this shit but for steaks I felt the less is more... I've wronged myself and others by not watching more.

Bake the steak in the oven for a while, then sear it in a pan like thirty seconds to a minute a side.

Juiciest goddamn steak you'll ever eat.
