Probably scenes too crammed and too attached to Luke to make it look good.

IIRC they did test stuff with a CGI Yoda in the DVD release of Empire Strikes Back but decided not to go forward with it

George Lucas was just a creator messing around with his older projects. Just so happened he shared these edits with the world.

Never thought about that and it is surprising he didn't out of spite for complainers. Same with adding Jar Jar in it like actually in it and not just the "weesa free!" thing if that was him.

Was part of the deal with Disney that they weren't allowed to release the un-edited versions? Otherwise, why haven't they?

Otherwise, why haven't they?Restoring and upscaling the original edits (or whatever is closest to them, Lucas lost the original prints IIRC) would be very time consuming process.
