I mostly too lazy so i just wash the skin thoroughly and use it as it is. Fried, baked, stew, curry, maybe except mashed potatoes

People in English speaking countries don't, imo. But here the supermarkets differentiate between potatoes depending on how starchy they are

I think he's in Asia.

In the US they definitely separate and sort them and tell you what's what(and sometimes little placards that tell you what they're best suited for). Baby Red Potatoes are my favorite. Soft and perfect when roasted with garlic and olive oil.

A couple of times Ive used the peel, cut itnto strips and fried them crispy. great as a snack or side/topping the dish. Doing so with sweet potato peels is great.
