You might try Kingdom Come Deliverance -- lots of Polish (?) woods and hills to explore with bandit camps, old mines, treasure chests, etc. to locate. The best part is, early in the game, enemies are all life-and-death situations, so players can't just go stomping through the woods like morons or they'll run into a 6-on-1 situation and perish impotently.
Although this isn't really what I'd consider an "exploration" game, there's definitely a lot of things to find in the wilderness. Players can spend a lot of time out there hunting or just training their pupper. --- Take me down from the ridge where the summer ends And watch the city spread out just like a jet's flame ...
