If Pence and the Cabinet invoke the 25th Amendment and declare Trump incapable, Trump can write a letter saying that he actually isn't incapable. At that point, it goes to Congress if Pence still wants to push it.

Pence does not want to invoke the 25th Amendment, so this is all just posturing by the Democrats.

McConnell has not said how he will vote if Trump is impeached (again) tomorrow but everyone thinks that McConnell would get a conviction if he comes out for conviction.

Actually, it is somewhat unclear if Congress(both houses would need to) can invoke the 25th.

"Whenever the Vice President and a majority of either the principal officers of the executive departments or of such other body as Congress may by law provide, transmit to the President pro tempore of the Senate and the Speaker of the House of Representatives their written declaration that the President is unable to discharge the powers and duties of his office, the Vice President shall immediately assume the powers and duties of the office as Acting President."

It broadly appears that the House and Senate could in joint invoke the 25th, but it would certainly get sent to the SC to unravel how they want to interpret this line. Much like the various placement of commas in the 2nd there will be contention over if it means the (Vice Pres and Cabinet) or (Congress); or if it means the (Vice Pres and Cabinet) or the (Vice Pres and Congress). (parentheses added to help clarify my groupings because English is vague and make interpretations difficult, which is the problem in the first place.)
