Slasher is quite good. I think it's Canadian? It's on Netflix. It's an anthology series so every season is a different story but some of the cast is the same (just playing different characters). The stories and killer motivations are quite varied across the 3 season it has so far and the settings are all very different, and it does a pretty good job with twists and managing them before reveals. Season 1 is a sort of standard "serial killer in small town middle America" story with a bit of a biblical element (focusing on deadly sins but not derivative of Se7en). Season 2 has a Friday the 13th-like summer camp setting only the camp is in the mountains and now a sort of hippie commune plus it's winter. There are 2 main groups of characters, the former camp counsellors with a dark secret and the commune people who also have skeleton-closet backstories. the twist/reveal in that one is my favorite. The 3rd season focuses on a quirky apartment complex and the diverse residents of it with themes involving social media and wokeness. It has quite possibly the most brutal kill of any horror media I've ever seen... plus the victim wasn't even that bad of a person (most of the characters were pretty unsympathetic by design and a number of them deserved what they got but this one was definitely one of the more innocent ones).

Also I definitely vouch for Mindhunter and Fargo as well.

It's a bit older, but I'll put in a vote for Harper's Island.

I'm not even sure if I'd qualify it as a great show, but it's basically a slasher in the form of a TV show, with a big cast that gets gradually killed off in fun ways, with a pretty okay central mystery.

It's just a really fun ride. Maybe not precisely what you're looking for, but it's an enjoyable show.
