It feels way more subjective than people frame it to be. At least the bullshit part. There's time when I just want to play something that feels like Im against impossible odds. In those moments, I want a game with an insane difficulty that makes you as weak as the bad guys.

To the bad guys, you're the bullshit. And by a much larger margin :3.

I don't mind if they make it bullshit and even unfair on the hardest difficulty. I just don't want it to be lazy. Just an increase of enemy HP or it takes long to level up. Those are awful.

Pokemon Blue Kaizo, Crystal Kaizo, and Kaizo Emerald are great examples of very difficult games that are very well designed.
