If your character is at a disadvantage against him and you are using a slower character you've got to be extremely patient and defensive at some times and don't take his bait and always try to run in. Geez that's can be a rough matchup despite Falcon being able to get in quick with his mobility, especially when trying to recover because if the G&W player properly spaces Chef from the edge you're going to take like a million damage before you can make it back if you keep trying to snap the ledge.
