It stems from a time where less fortunate people had to make the most of what they had. They had to use all parts of the animal, and sometimes they only got those parts of the animal, so they found ways to make them palatable. Its still that way in much of the world.

The weirdest part of an animal I eat is tripe / honeycombs. Actually if you've had a mcrib you've eaten tripe without knowing it. I love that stuff. It's admittedly got a weird as fuck texture but it tastes great.
