i'll never understand what's up with the sauce on the top of the pizza in Chicago

toppings are called what they are because they are supposed to go on top

Mozzarella is literally more of a "topping" than marinara is so this makes no sense...

Because that's a St. Louis style pizza, not Chicago

It has yeast in the dough like a normal pizza & doesn't use that gross provel shit so no, it isn't. Plus I'm willing to go on a limb and assume "tavern style" predates that Imo's stuff.

no, it makes perfect sense. both the mozzarella and the toppings are supposed to go on top of the sauce. not the other way around. it's like making a sandwich and putting the mustard on the outside of the bread. that's just not how a sandwich is constructed.

"Topping" refers to an optional addition to pizza. Every rendition of pizza has some type of sauce, while New Haven style - widely acclaimed as the best American rendition of pizza - has parmigiana romano as the default.

The best of Chicago pizza is better than the best of New York's, but New York does get credit for just having a shitload of really inexpensive great pizza.

Also, the Stewart piece on this that always gets posted just sounds like a New Yorker whining about other places doing things differently than what he's used to.

i don't understand how this is supposed to be a refutation to anything i said

I thought I explained it well enough but to add on:
-Deep Dish: For people who like caramelized marinara.
-NY Style: For people who like caramelized mozzarella.

Both have their place. No further explanation needed

Deep dish is a subheading in Chicago pizza. A majority of Chicago pizza is the square-cut thin crust in the 2nd pic. It's a Sicilian style as Chicago has a lot of Sicily imports who left NYC in the early part of the 1900s.

Yeah idk if it's truly "Chicago style" since it's also the most common pizza style in MN/WI & I'd assume several other midwestern states & I've yet to see concrete proof it originated in Chicago, but from what I've heard it's the average Chicagoan's preferred type of pizza.

Yes so I can taste the butter as I bite into the bread, not sure how that is relevant to pizza.

The way it's cut into squares & tiny corner pieces rather than traditional slices + the crust being cracker thin as opposed to "floppy thin"

Chicago-style pizza is pizza prepared according to several different styles developed in Chicago. The most famous is the deep-dish pizza. The pan in which it is baked gives the pizza its characteristically high edge which provides ample space for large amounts of cheese and a chunky tomato sauce. Chicago-style pizza may be prepared in deep-dish style and as a stuffed pizza.

Technically NY has deep dish also, but I wouldn't call it New York style pizza and expect people think I meant deep dish NY style.

Not trying to be a dick, i'm just saying. Usually the style associated with the city is the widely popular one. NY is the thin crust, Chicago is deep dish. I think most would agree that is the common standard.

True but again, Chicago-style thin crust is the most popular kind among native Chicagoans.
