I go out a few times a year because I play poker somewhat seriously and work in the casino business so I end up out there for conferences or meetings. I haven't been since December though so it's kind of been a while. Food is a tough question to answer because it comes down to what you like to eat and how much you want to spend. I am doing the anniversary dinner at the Mayfair supper club in the Bellagio because the wife will like it and it's a great spot for that type of meal. Lago is also great in the Bellagio. Venetian and Wynn have some great stuff too and you have so many options just in those two hotels depending on what you like. Pick a restaurant or two that you really want to go to and then play the rest of the trip by ear. I have never gone to Fremont Street but have heard it's a good time and change of pace. We are also probably going to try that this trip. Like everything else in Vegas, the crowds will depend on the hotel/place you are at. Night 1 we're doing Prime Steakhouse as our own anniversary / her dinner meal. So maybe we do Mayfair while it's "free" (through the package) and then swing back to Lago. I dunno. As for the rest of the nights, I can always swing back to one of the options too. I definitely have a bunch of stuff jotted down to try (SW Steakhouse at wynn, Peppermill, Black Tap, Sushi Samba, Mon Ami Gabi or Eiffel Tower at Paris...many more), so swinging back definitely is an option.
