Also, I do my own blend of spices for the turkey tacos I enjoy, and fry the corn tortillas in a pan to make my own hard shells. No need for sauce because the meat is already a little juicy when I'm done cooking it. You know? I haven't done this in a while. Unfortunately for the last one, a couple blocks or more of cheese will last a long time, shredded. I should know as someone who makes a blend of Monterrey Jack and Mozzarella for pizzas, and the weeks' worth of pizza it makes me to get that ratio right (by buying enough blocks). For tacos? I imagine there's a little more leniency in how much cheese you need per type, but tacos are smaller than even individual mini-pizzas, in terms of cheese utilized. It is the only place that isnt chain when we do deliveries, so we keep going back. Well I guess theyre from Sinaloa, and brought their niece here to work.
