The type of bananas that we eat (Cavendish & Gros Michel) are triploid, that is, they have 3 sets of chromosomes. This causes the seeds to fail to develop. This also means they cannot be bred by normal means, but are propagated asexually from offshoots. Because all bananas are essentially clones, they are especially vulnerable to pathogens such as Panama disease, a fungus that devastated Gros Michel production in the early 20th century. The Cavendish was immune to the fungus, but a new strain has appeared which could endanger production within the next 20 years. Developing a new resistant cultivar is extremely difficult due to the need for a triploid (and thus infertile) plant.

Diploid and tetraploid bananas have seeds.

I watched a thing a while back and its especially tough to develop a new one because the cavendish are so good for shipping long distance. A lot of other bananas wont last long enough to even make it to stores

Apparently it's used as a vegetable in Thai, Vietnamese, and Filipino cuisine. Supposedly they are slightly crunchy and taste a bit like artichoke. I've seen a number recipes that use it to make an imitation fried fish because the texture is flaky like cod.
