I mean... Not too much in my experience. some have parkour challenges or stealth stuff rather than killing challenges

New Vegas was pretty nice in that you could resolve a lot of quests through speech or using skills other than combat. Could legit talk down the final boss if you wanted.

It was not very open world really, though. Open world gaming is great! What is not great is that developers are lazy and so basically you just have a long string of fetch quests and repetitive gameplay

Yes, that's why I don't play those games. Even BotW was really pushing it. Only reason it was fun was because it had good gameplay to go with the open world design which was admittedly good, but there wasn't a whole lot interesting to find.
