IIRC it's because there's technically no default flavor, now. The neon orange is nacho cheese, the lighter coloring is for cool ranch, and so on.

According to my 10 minute Google search, the biggest change was in 1995 and possibly 2006. I would say the orange-ness probably started in '95 and began increasing after that.

I'm pretty sure they did at one point and people didn't like it. Market research shows people get a sexual thrill from being covered in orange dust and the Dorito eating experience wasn't the same without it.
