...a "get in at the ground floor" sort of opportunity (as in they want to bring you on right at the start and you can grow with the job as they grow)?

Startups tend to not be as profitable as major corporations. Theyre like buying lottery tickets.

Whats the opportunity? Im considering taking a 40k less paying job doing identical work in a higher cost of living area right now to be in a happier environment and get a part-time PhD to an almost guaranteed academic position. It doesnt sound reasonable. But a PhD is on my bucket list and I love mentoring students...but money and free time :/

Yeah, most on the ground floor jobs go belly up before they ever become big. Sure if you pick the right company and it becomes very successful you could have a winning lottery ticket if the owners aren't complete douches that will forget those that helped them build it up, but that doesn't always happen.

Well the job I'm thinking of isn't a startup, it's a new franchise. So it's not exactly an unknown but it's still a new face in the area.

It's definitely the closest to a hire I've gotten as of late. Also I have no idea if it pays low (it might pay great; I haven't been offered anything or discussed salary as of yet), I just want to be ready if it does (since, given the circumstances, it seems possible).

The franchisee wants to meet on Tuesday for a face-to-face so, at least to me, he seems interested in going forward.
