The bad experience growing up where your parent would boil broccoli in a pot of water for half an hour and force you to eat the sad pale mushy remains because "it's good for you".

I know. It's awful. Anyone would hate vegetables if that's what they thought vegetables were.

Its amazing how much brussels sprouts reputation has changed in the past 10 years now that people actually know how to cook them.

This is actually a pretty interesting take I never had to think about. I never really thought about parents just doing a shit job in introducing vegetables. But a lot of kids are just garbage eaters. They will say exactly what they want, take one bite and say they don't want it anymore. It's hard to completely blame the parents when kids are such douchebags.

Fresh vegetables like broccoli and carrots are great, although I hear that steamed vegetables (not boiled) are apparently better for bio absorption of nutrients. Still prefer fresh, but just throwing it out there.

The OP was basically my experience as a kid. I thought I hated vegetables until I learned to cook them myself.

Part of it is also just growing up and redefining your taste tho. Most kids want chicken nuggets for every meal. Probably cause as soon as you look away from your kid for 2 seconds, someone bought them chicken nuggets from McDonald's. Our country doesn't really respect others when it comes to diets.

Huh, TIL. Did seem kinda weird that I would like brussels sprouts while my mom hates them. Makes me wonder if there's something similar for lima beans

Yeah I think a lot of people take issues with food into adulthood because of parents doing a poor job with them.

You gotta accept that you basically have a child's tastes if you flat out don't like vegetables at all though.

I agree that's part of it sure, but I'm also convinced my mom didn't know how to cook certain things.

I mean, I didn't like steak until I was an adult either, until I found out she bought cheap cuts and overcooked it

True. It's like when people make spaghetti with just sauce and noodles. If that's what you grow up thinking spaghetti is, I wouldn't blame you for not liking it lol. And steak definitely relies on being cooked well. It's still good to me regardless, but it's definitely noticable.

For some reason I loved raw vegetables as a kid, so my mom would give me some prior to dinner most days. And I've loved most types of vegetables since. So I guess I was fortunate there.

Yes.

To be fair, she eats greens, too, but a lot of processed foods like vegan meal bars.

Brussel sprouts with seasoning are decent.

And obviously potatoes, which are amazing.

I do find raw vegetables largely a mind over matter kind of thing though - if you don't understand the benefits, it just doesn't make sense.
