I've never watched any of it, I've had no spoilers, so... here we go.

I'm starting with episode one, though I think there was a pilot?

The Gems are fighting some weird worm thing and Steven cannot summon his weapon from his gem... except for what appears to be when he is feeling really happy?

So... does the pilot give more context?

And episode 2 mentions as much.

The first season is peculiar. You'll either love it or hate it at first as it varies by episode. It starts to pick up around Ep 35.

The show can be kind of slow in revealing what exactly is going on, but definitely rewards patience in that regard. It tries to keep things simple in terms of genre conventions and characterizations, so it's easy to understand at first, but opens up immensely as the show goes on and becomes much more substantial.

FTFY, and yes his mother is Rose Quartz whom you see in the photo in storage, and the picture hanging in the house.

I like the fact that dad seems like a regular dude who maybe fell on hard times after his wife died.

I'm intrigued to see if he was the reason for Rose's passing and that is why the Gems dislike him, or if he was a bigger problem than that.

So... I am assuming that to have a child a Gem has to put their life into the gem that is then passed onto their child... which is what happened with Steven.

I like the complimentary attitudes of the gems.

Pearl is the most mom-like in terms of taking care of Steven, Amethyst is the most chill and understanding of Steven being a kid. Garnet is kinda the most logical of them.

The show uses its long first season to gradually unfurl its premise: what the Crystal Gems are, who/what Steven is, how they work, what they do, their capabilities, etc. etc. It can feel slow and disjointed, but it builds a strong foundation for when the plot really takes of.

Make people eat fries.... oh no.

I mean, at least in Season 1 they are 11 minutes long and most of them have been cute, but inconsequential.

They'll stay that way, with 4 exceptions (there are 3 22 minute episodes and 1 44 minute episode)

Pretty much yeah

Yes they can all fuse

Steven ages, just slowly, and more on that will come up in later episodes.

Yes their physical form is made of light.

I really hope that the Gems will end up being kinda flawed in some way. You can already tell they don't necessarily care TOO much about human ways of life. It is difficult to when you do not need to eat and do not age.
