Loaded Potatoes the world has ever known.

For the future of humanity, I will Chronicle my deed on gamefaqs current events board. So that those seeking salvation may find it.

Ingredients:
8 russet potatoes of fairly decent size and shape out of a standard potato sack.

4 slices hickory smoked bacon (I got it from behind the deli counter at fries for like 5 bucks a pound).

1 medium yellow onion.

1/2 cup cracker cut (sliced) pepperoni, diced further Into little squares.

2-3 Tbs butter.

Sea salt (from a disposable grinder)
Seasoning pepper.

2 Tbs olive oil (or vegetable oil)

Shredded cheese (however the fuck much you want.)

Preheat the oven to 350 degrees, and get a rectangular baking dish large enough to fit your 8 potatoes, (and also large enough to then later fit 16 halves.) Line it with foil to make clean up easier.

Take a fork and puncture the potatoes so they dont explode when baking. One on each side and end should do.

Lightly coat the punctured potatoes in the oil, and place on the baking sheet.

Lightly grind salt over the top of each potato, which should stick thanks to the oil, turn over the potatoes and repeat, then put in the oven at 350 for 65-70 minutes. If a fork can easily make it's way through the inside of the potato, they are done. (The skin might take a little pressure to puncture but the inside should be easy.)

While the potatoes are baking:

Cut your 4 slices of bacon in half, and cook them until they are cooked, particularly all the fat, but not crunchy (much easier with thick sliced bacon).

Remove them and put them on top of a paper towel to soak off the grease, and then put a paper towel on top. When dried off tear I to bacon bits and put aside.

Pour out most of the grease Into your grease jar (I use empty rinsed out jelly jars). But leave enough to just coat the bottom of the pan.

Your yellow onion needs to be peeled and cut into little squarish shapes. Put them in the pan with the bacon grease over a medium low heat. You dont want to burn or dry them out. Scoop them together, let them cook for a while, flip the pile over, stir them, scoop them back together repeat. They will begin to turn transparent, and then brown, but not a burnt brown, they will carmelize. When your onions are deep brown and soft take them off the heat, and put then in a dish on the side, and wait for the potatoes to finish.

When the potatoes are done take them out of the oven, and allow them to cool enough for basic handling.

While the potatoes are cooling put your diced pepperoni into the frying pan that your bacon and onions were cooked in, and cook them a bit. They dont need to be crispy (unless you want) but they will turn a deeper red when cooked (pepperoni is raw)

Slice each potato in half, and scoop out the insides to make a bowl shape leaving a thin layer of potatoe above the skin. Put the scooped out potato insides Into a mixing bowl, put in 2 tbs of butter I to the hot potato innards, and use a spoon to smash it all up into a thick potato paste, smashing all chunks with the spoon (no milk, we arent making actual mashed potatoes).

Grind some salt and sprinkle some seasoning pepper to taste Into the paste.

Dump in the carmelized onions and pepperoni, stir and smoosh around until the mixture is evenly distributed.

Scoop out the mixture and refill the potato skins. You can use the concave side of the spoon to make it a smooth little mound.

Stick your bacon bits onto the filling of each potato.

Line up your potato halves onto the tin foil lined tray, top with cheese, and put back into the oven at 350 degrees again, for 5 minutes or until the cheese is melted to your desired level of doneness.

Let cool for 5 minutes, serve with sour cream for dipping.
