Here's my history with it

Xbox One, complete n00b, using a controller... walked around while drinking beers
PC... starting to get the hang of it. This is partially my fault, but I needed the kb/m controls to understand all the mechanics. Haven't modded it yet. It still seems like a lot of walking around... is there more to it than that? Collecting, crafting, leveling up? What happens if you clear out all the forts, do the enemies reappear?

Not deep. Enemies respawn. Kill enemies however and you'll be fine. Enchanting is probably the deepest aspect of the game and it totally breaks the game.

Probably the "deepest" part of the game was the civil war and even that was really dumb and shallow and I only used it to fix a glitch lol.

All of the guild questlines mirror the main questline which is basically that you're the second coming of whatever elder scrolls jesus exists and the world can't exist without you and you're the obi wan kenobi of mission: impossible. but then even though you become head jizz master of every single group and the world the game never even makes you feel like you earned it and there are people with the same or better ability as you so all these stories are ultimately meaningless.

The Daedric Prince quests are kinda cool though I guess.

It's not really that deep. Currently I've started a new game where I ignore all the questlines and live as a simple miner (I was going to play normally but I got pissed when Lydia disappeared while holding all my dragon bones so I decided to say fuck it and go full hermit RP).

For me, the hook is exploration. There's always a story behind ever nook and cranny.

Granted, it's not airtight; specific instances are great, but there's some inconsistency with how the world works, mostly concerning magic.

I'm gonna dual wield axes and split heads wherever I go!

Oh hey, I picked up a bow. Perhaps I could soften up my foes a little before splitting their heads.

Not that I'm afraid of dying, just being a little careful. And I've got some spare arrows... wouldn't want them to go to waste, yeah.

Wow, getting a headshot is pretty cool! But they look kinda stupid walking around with an arrow in their head...

Oh look, I can increase my headshot damage with this talent!

*many hours later*

Not sure what you mean by "deep". The appeal of open world games like Skyrim and Fallout 3 / NV / 4, at least to me, is the freedom to go wherever, whenever. You can play for hundreds of hours without completing the main quest if you want. There are collectibles like books and other lore items, and the leveling and crafting systems are kind of interesting, but nothing to write home about. But the combat and exploration are interesting enough that I'll spend a lot of time wandering into random caves and dungeons just to see what's inside (and smash some teeth).

I do really enjoy the game, but there are no complex mechanics, high skill caps or anything. It's extremely fun to was dozens, if not, hundreds of hours with.
