Dark Souls Remastered or Bloodborne. My vote goes to BB. Dark Souls 3 is my favorite of the trilogy but I feel playing 1 first will let you appreciate 3 more.

The first one is slower and easier to get the hang of, so probably that one. Demons souls is on the easier side too
