I buy grass-fed meat, usually 80/20 or 85/15, whatever is on sale at the market. Some Kerrygold butter to coat the pan at about medium heat. Season with salt and pepper, put on pan and cook both sides 2-3 mins to medium/medium well. Perfect on the inside, with a nice little char on the outside.

Best burgers you'll ever have imo.

i have a cast iron flat top propane grill. i season and ball up my burger in 3 to 4oz balls, stick them in the freezer for 10 to 15 mins while my grill gets hot. throw the balls on smash them down as far as i can. flip after 3 minutes. throw some cheese on.

while thats going on i toast the buns. dont skimp on buns and toasting them goes a long way...

Doing keto so I cannot have regular bread, so I'll either do a lettuce wrap or make my own low-carb seed bread, as shown above. Has colby jack cheese, bacon and an egg in there as well.

Smoking works because it has a shallow thermal gradient. The main goal of low and slow is to melt the collagen in the muscle while also preventing the meat itself from becoming overcooked.

Burgers don't have to worry about this so they're best done over high heat for a short amount of time. Chickens don't have much collagen either.

I'm surprised at how well the ironed burger worked out. But damn did it look good. Smash burgers might be a thing I'll start going for and cast iron.

It depends on what you're smoking but yeah for the most part the main goal is to break down collagen. You can still smoke burgers though, but you need to have the meat be like 50% fat to compensate for what you're going to lose when you cook it. Chicken can be smoked too but it absorbs smoke really fast and it's easy to over smoke it. Both of those you would cook to temperature and not go by feel/softness like you would something where you're trying to break down collagen.
