I finally bit the bullet and spent an hour and a half hand chopping some frozen chuck that I've had for a while.

I tried to make some burgers, but they sorta fell apart and then I made them. I made it into stirfy with leftover rice, a couple of eggs, and also a few chopped onions which was delicious.

Now I realize that I have no idea what else I can reasonable make with this.

I would try making a pot roast or beef soup.

A stew seems like the most obvious choice for me.

try curry

Eating steak with curry seems... wrong and kind of insulting.
I realize a lot of the curry that we eat was made by western society, but, it still feels bad.

So many options, wish you had an insta pot hehe!!

Tacos are another option. Cut it up fairly small and cook it in a bit of oil, toss on tortillas with lettuce/tomato and (if you like) cheese....some salsa and you got da yums.

But as mentioned above, you could just make a nice pot of chilli, and then if you want, put that chilli on a tortilla or in it, for a taco or burrito!!!

Stew of course is the go to, or soups, thats what the insta pot is for cause you can make a good one in like 5-10 minutes lol. Toss in the beef, da brocolii, some other veggies and herbs and BAM, pressure cook that stuff for 5-10 and you got yoorself a super soup!!! hehe.

Other options are:

Kebabs (if they are nice chunks) with some bell peppers/mushrooms etc over a nice fire, yum!!
Philly Cheese Steak (much like the tacos but more like strips instead of small chunks) + onions etc yum.
A gazillion types of asian dishes, stir fry, brocolli beef, mongolian etc...so yum!!!
You can also bread it and deep fry it if you like (flour + itallian bread crumbs + spices, then into hot oil!!).

Now if you only lived near me and could invite me over...this is making me hungry lol.

I do actually have an insta pot, I got it for christmas. I've realized that I'm not really a big fan of it though, because I can't get a sear with it, and I don't have a cast iron pan to /really/ crisp the outside and then put it in the insta pot.

My gf loves it because it's really easy to whip up some quick chicken breasts, it has the precision that she likes with baking, but for cooking.

Cut it into very small pieces, getting rid of any gobs of fat you can (but a lot will be marbled into the beef), and marinade it for like an entire 24+ hours in a zip lock bag, shaking/turning over every several hours.
Pan cook it and saute mushrooms in a small pot/pan as well.
Serve together.
I'd add some sides as well.
Either couscous (there's boxes you can buy where you just pour it into boiling water, remove from heat, stir, and let it sit covered for 5 min and it's ready....super easy) or baked/microwaved potato for a starch
And then steamed broccoli and/or cauliflower as well.

Might still be too chewy after that to work for tacos. Otherwise, agreed.

I normally serve my steak with sauteed mushrooms and onions, over rice.

I could try cooking some couscous though.

Plain couscous is fine, but I usually get parmesan couscous, or some other seasoning.

Yeah, I think that a soup can really get the full taste of chuck.

I bought a soup and stew cookbook a while back on a recommendation, and I think I found something that me and my gf are interested in trying. They're calling it "Five-spice beef soup", and it should be pretty good, maybe.
