I just played Chrono trigger for the first time (for a 25 year old game it was astoundingly good) and realized that this is one of a myriad of classics I've never touched. So I'm curious what other games people think are absolutely must play.

I totally feel you regarding Chrono Trigger, I played that for the first time in 2013 and adored it. No nostalgia required to appreciate that one.
If schools had "required gaming," these are some titles I believe would fit the bill. They're not necessarily the best, but they're touchstones of important developments/eras in gaming... and perhaps more importantly, they're all still a blast to play. Ms. Pac-Man (1982) Tetris (1984... though much later outside of the Soviet Union ) Super Mario Bros. (1985) SimCity (1989) Daytona USA (1993) (Chrono Trigger [1995]) Super Mario 64 (1996) Metal Gear Solid (1998) Metroid Prime (2002) WarioWare, Inc.: Mega Microgame$! (2003) Resident Evil 4 (2005) Portal (2007) Plants vs. Zombies (2009) I'm more of a retro gamer, so I'll leave the 2010s to someone else...! --- The music was thud-like. ur not missing much post 2006 Totally fair. I picked WarioWare to represent minigame compilations (which were huge in the 2000s, a trend I actually miss) and pick-up and play portable gaming. Then I picked PvZ to represent casual and indie gaming. However, they're definitely the most "out-there" picks on my list, perhaps barring Daytona USA. Also, Yoshi's Island is a great pick, good call ninkendo. --- The music was thud-like. The music was... thud-like. ... Copied to Clipboard!
