In the EU it was Plagueis trying to create life and the force pushed back against that and created anakin to restore the balance due to the blatant meddling in the balance. In Disney Canon we don't have much on plagueis because the plagueis novel is non canon. The story group confirmed the force itself made anakin and the dark side is an unreliable narrator.
