In the case of Goodfellas, they got a lot of actual mob guys on set to advise on little touches of authenticity. A lot of the background extras are these guys!

Towards the end there's one of the mob Hitman who's an older guy with glasses. He's Frank Vincent's character in real life. No. He does his research, read books, and even talk with former mob, and maybe current mobsters to understand how some things work. Frank Sinatra had some mob ties, Scorsese, doubtful. Same goes for Coppola.
