When Luke and Leia were split, they Leia took her adopted parents last name. Why wouldnt Obi Wan have made this happen with Luke and his adopted family ? Wouldnt they want to keep the Skywalker name out of this kids life so as to help keep him out of danger if Anakin ever tried to track him down?

Because Lucas didn't actually have a grand master plan for the series when he made A New Hope despite claims to the contrary.

All of this horse shit and sequels and prequels weren't even planned back then, that's why. There was no larger star wars story to make sense of until it sodl too well to stop.

Anakin had no idea he even had kids. He wouldn't just go up to some general and be all like, "I need you to look for someone who might not even exist."

Well out-of-universe, it's pretty clear that in ANH none of the main characters was supposed to be related to each other, so it wasn't a problem for Luke and Anakin to share a last name, and there was no need for Leia to also share it.

In-universe, I'm sure Wookiepedia has some nonsense taken off of a Chinese knockoff action figure but in ANH itself, what makes you so sure uncle Owen's last name isn't Skywalker? They do live on Tattooine, plus Shmi lived a long time after Anakin left and we don't see what went on in that time.

I always assumed Luke either took their name legally so he'd be Luke Lars, or that Skywalker was a slave name.

I suppose a few unspoken notes in the film script isn't quite a Chinese knock-off action figure, but like I said, if you watch the movie, it never comes up, unless there's a shot of a sign or something that I'm just forgetting.

Luke was thinking about her. Real loudly. Vader even says directly that Luke's "thoughts betray him".

he also hated tattooine and didn't want to go back there. he probably wouldn't have wanted other empire people digging into his past either, so they almost certainly wouldn't have been there on his orders.

tattooine is something of a remote nowhere planet. that's also why obi-wan was able to hide there so long

They did cover it in one of the books (the rise of Darth vader) and this is close, but the wrong end of it. Tatooine was the last place Vader would go becuase it held memories for Anikin that were still positive. He wouldn't go there if only to avoid anything that would let that old part of himself out.

A different work also spelled something out (though it was for a different character): only in fiction is it automatically assumed the same last name equals relation. In the real world, unrelated people can share the same last name (how many people named smith do you know), or even the same full name (google my name and you get a country singer), and in a galaxy containing uncounted trillions of people, some repetition is going to happen.
