I have a whetstone but I haven't really used it yet.
I've just been relying on those little hand things that almost look like a mouse.

I also have a bone-handled sharpening steel.

But I am not sure about my technique.

When you say budget.. how much did you spend? There's a massive difference between a $30 knife, a $100 knife, and a $300+ knife.

I have a sharpener with grinding stones in it and its foolproof to use to get the correct angle (for Japanese knife angles). Never used a whetstone.

But you can buy an attatchment you put on ypur knife which will angle the knife correctly.

Yeah, but not electric one, those aren't good imo. Mine has 2 stones, one is rougher the other one is finer, so you do the rough one first. You gotta make sure it matches the type of knife tho. I'm considering to send my knives to a proffesional sharpener (we have mail order service you can do that with), it's recomended to do so once a year if you have great knives.

I can't say I have great knives, but good ones.
I just was never taught how to sharpen them properly.
But I do have one of those sharpeners, which is a pull through.
But I also have a whetstone.

As for sending things out to be properly sharpened, I agree.
Same with Saws and Axes.
