What is it that you fear happening if you don't get the "best" one?

There's not really that many choices for cookware, All-Clad is the best, if you can't afford it then Anolon and Calphalon are great. I prefer Anolon since it tends to have a little more heft to it, but the anodized aluminum core is the same for both brands. If I could afford All-Clad I'd buy it in a second.

For non stick skillets they all pretty much suck in regards to the coating. Suck in the sense that it won't last long. So unless you want to go the cast iron route, just buy cheap and replace it when you need to.

For everything else, ya. Tri-ply Stainless steel and buy the best you can afford.
