If Im making a table top out of 3 boards. Do I need to use pegs between them or can I just use wood glue and call it a day?

I don't know your exact blueprint, but the function of pegs is to increase stability and to guarantee your structure remains flush while the glue dries.

I can also use sandwich boards and clamp the boards down while simultaneously glueing and clamping then across, no? --- Don't runaway from troubles... instead meet them Hedons. ...
