I made japanese curry today.

Pork potato carrot garlic onion chili pepper

Salt pepper, allspice powder, cooking oil, dried chili, curry block

Stir fry the aromatics, add the pork then veggies. Add little salt, pepper, spices keep flame on high. After everythjng have a layer of oil and seasoning and the outer layers are caramelized, add water.

Put on lid and wait until the potato is soft. Put in curry block and stir until it dissolve

Voila. I make them ultra spicy tho.

Well if you feel like getting fancy:

Dissolve over heat 5 tablespoons of sugar into 1/2 cup of sake. The heat will get all of the sugar into the alcohol. Once it starts to boil turn off the heat and let cool. You now have a home made mirin substitute.

For a base Teriyaki sauce its

1/2 cup mirin
1/4 cup sake
1/4 cup soy sauce

Combine the liquids in a sauce pan over medium heat, and stir in the sugar to dissolve. Simmer with a slight rolling boil (small bubbles) until the liquid reduces to a syrup like consistency. It is typically ready when it reduces by about half, so you'll have half a cup of base teriyaki sauce. If you want to cook in a pot adobo style, or use as a marinade dont reduce as much.

You can add to the base, toss in ingredients as soon as sugar is dissolved. Mincing garlic and ginger is great.

A little fish sauce can give it an eel sauce like tang. A little rice vinegar can add some tang as well (careful if you are using seasoned rice vinegar)

If you are partial to korean flavor profiles I suggest using brown sugar, and browning garlic and sesame seeds in sesame oil before pouring in the mirin, sake, and soy sauce.
