Fallout one and two. One if you had high talking skills could talk your way to victory. In 2, you can get a ton of support making the fight extremely easy.

In Planescape Torment there were just a small handful of required fights and you could talk your away out of most situations. Including the final boss.

You can also make the Iron Golem fall off the ledge for an instant kill.

Using the bow as you're walking into the first Gohma boss's room in the original Legend of Zelda will instantly kill it.

i think you could also change the date on your system and kill him as well-during the fight

I dunno if this is really "skipping" the boss, since hitting it with a single arrow kills it. You're just killing it as soon as possible
