During the 16 hours of fasting, is taking liquids still okay? Like a protein shake or Gatorade or something like that.

The only liquids you can drink during the fast are ones that have zero or extremely little calories such as water, black coffee and tea

Water, tea or coffee with a little milk are what you should stick to. A protein shake is basically a meal replacement, so your calories will be coming from that; calories don't care if they're in liquid or solid form. Gatorade would spike your sugar like crazy.
When I do IF or a longer fast, water is my best friend. Put a little salt into a small cup of water to boost your electrolytes around what would be breakfast or shortly before what would be lunchtime.
