This one time at work we had to call someone in the US. She's Asian-American. I assumed she'd she sound American since she was from the west coast.
Incredibly thick texan accent.
I laughed a lot on hearing it.

Queue idiot coworker commenting to her 'I'm surprised you speak English so well'.

Just a din anecdote and a nice email from HR to the team

Uhm, yeah lol? I assume gender all day er day. If you look and or sound like a man/woman I will address you as such, unless I am notified otherwise. If you look ambiguous, then I may just use something like "hey, you in the red shirt".

I don't usually address people as "sir" or "ma'am" in my work thankfully. I usually use their name and if I didn't catch it, I'd ask them to repeat it. Safer this way.

Yes, as with everything in life, but I don't really use gendered terms towards someone directly, so it doesn't really ever come into play. If I was incorrect, I would just apologize and continue the conversation. This idea people need to go out of their way to be gender neutral to avoid offense is one of the dumber modern social justice issues.
