I'd go slightly lower heat and about half the cooking time as you would a steak, depending on how thick the chop is. It's easy to overcook the pork so use a thermometer for accurate core temperature.

Little olive oil in a pan, high heat for 3 mins on both sides without moving it to let it sear real good then bake for like 5 minutes. oh wait, can you deglaze a cast iron pan? It should be fine right, i don't know i never work with cast iron. Can you sear roast potatos too? Get a nice brown crust with the bits from the pork chop pan and then throw it in there with the pork chops to soften up?

This is how you cook a pork chop:
Cook it so that all sides are well-circulatedthere are few deep or hot spots. Place the pork on a grill rack and grill it until the pork is done. Cut it up and serve with your favorite sauce, like my sweet pepper chicken (you only need 1/2 can, although my recipe makes enough). There you have it! We had such a fun Sunday afternoon cooking session! We ended up getting to see a bunch of different dishes, most of which were created by the awesome folks at Nonna's Cooks. --- ...
