I honestly don't remember them before the 360. I mean there were turbo or something like that before. But just not a better built controller in general . I mean why isn't that in the box to start with.

What controller besides the Nintendo's pro controller lineup are better for that system (like ps4/xbox) than the controller that they provide in the system box?

If you go far enough back, the aftermarket controllers were the better controllers. Mad Catz had an awesome 6 button Genesis controller that was practically required to play Street Fighter and was just straight-up better than the official Sega controller.
