Paid nearly $150 for 2 steaks. Normally I pan fry my steaks but not sure if I should cook it like I normally would.

Anyone have any suggestions/experience?

Of course it needs to be well done and done with ketchup for dipping.

1 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon salt
1/4 garlic clove, minced

Makes a mighty good rub for a steak if you like spicy

You'll overcook it that way. The thinner they are, the faster it'll cook.

If you're that worried OP, prepare everything else for the dish, the sauce, the sides, whatever, and then pan sear the steaks (one at a time to test it out), a minute on each side. Make sure the steak is room temperature when you cook it. And you can throw it back into the pan if it's not to your liking. If it's undercooked, you can still cook it, if it's overcooked, you're screwed.

Was gonna say close to this, except use cast iron if you have it available. It retains heat better than a frying pan and gives a more even sear, especially on the sides.

Too much stuff. I'm simply using Himalayian pink salt, black pepper and garlic. I did Australian tomahawks a few weeks back in a whiskey marinade similar to that (used actual chili's instead of powder and red pepper flakes) and it was great.

I'm fine eating my steak borderline blue or rare (prefer rare to medium-rare though). The most important thing to me is the sear. I'm worried that if I cook it too high to get the sear I want I might ruin it. I've been considering cutting it into slices and doing it hotpot style (the wife and I eat homemade hotpot every other week, it's got a griddle and pot in the middle). Little easier to monitor that way. Probably should get a meat thermometer.

I got a pretty decent cast iron pan. Can't go back to a regular frying pan after using this for the past year.

I bought a $40 Wagyu steak once and it was extremely thin and cooked fully through in about 5 minutes on a grill. That's probably the best way to do it.

These are about 300g each. They haven't arrived yet but I'm expecting it to be about an inch thick. If it was extremely thin I couldn't see myself cooking it for more than 40 seconds per side.
