In Star Wars the dude is like "Our security volunteers will be no match against the battle-hardened Federation Army."

But that army is racks of droids....

How do you battle-harden a droid that you keep in a box the moment the battle is over?

It's like saying your toaster is a superior toaster than a brand new one because you used it 50 times before.

If it's an adaptive AI that's used for the droids, which given how other droids like R2 and C3P0 are shown to learn and adapt over time, I'm sure they do, then it does in fact "learn" new battle tactics over time and improve in military strategies and tactics.

Droids in Star Wars are often shown to be essentially sentient creatures, meaning at the very least they have a very advanced, adaptive AI.
