I grew up in Los Angeles, ate at 30+ Mexican restaurants, dozens of Mexican food trucks, Mexican family food etc.

I also ate Mexican food from the Mission District in San Francisco, the food Chiptole is based off of.

The only difference between Chipotle specifically and other Mexican food places is that Chipotle uses better ingredients than most of them and that it's a mega-chain.

Also...
Taco Bell, Chipotle, and El Pollo Loco is filled with Latinos customers who were born in Central America or Mexico.

What makes food more authentic or "flavorful" anywhere else? The recipes are the exact same fucking thing. Pico De Gallo is bland everywhere.
What do you guys want from your Mexican food exactly?

The obsession that American people have with authenticity, like the story of a dish affects the food's taste more than the actual taste is so fucking absurd to me.

So because it's a chain and American people like it, it's bad? I don't get it, it's fucking madness.

I've only had Chipotle once, and it didn't taste as good as any of the Mexican places around here, IMO.

People seem to like Taco Bell in the US, so I guess every mexican food should consist of 70% refried beans and sour cream.

For real though, the best Mexican food Ive had has always been the least authentic. Ive had food in Mexico, but it was always in upscale touristy locales. For years, I thought this was authentic, until I had to spend some time in Del Rio, TX which is right on the border with Mexico. It is a place where nothing is upscale, where 90% of the population is Mexican immigrants and where I had the blandest food of my life.

So yeah, authenticity is overrated. I do like chipotle though, so I guess Im just weird. Like Subway though, the quality of your meal depends heavily on ingredients and whos preparing the food.

I just ate Sharky's today, which is a Mexican food chain in Los Angeles/The Valley.
It's so extremely unauthentic.

I ate a wheat tortilla and sea weed wrapped Salmon burrito. Basically the least Mexican, most Californian thing ever. And it was probably better tasting than any dumpster burrito you get a Mexican food truck here.

But I like California meme food kind of.
Salmon, Sushi rolls, Avocados, "healthy" foods etc

The funniest thing is, not only is it bland in Los Angeles too, Mexican food has a reputation for being spicy, but you go to any 99% Mexican area in Los Angeles and eat the food there and the salsa is basically water. I have never eaten a single restaurant Mexican food dish or salsa and thought it was hot.
Maybe homestyle, but the majority of the people here like bland and unspicy Mexican food.
