mix half and half regular flour, and selomina flour and egg.
knead it for around 10 minutes. i have to proper flattening tool nor cutting tool and the dough is pretty hard to knead since it is supposed to be elastic, so i just roll it manually and cut it into thin strips manually. the result is a bit too thick for my taste. kinda hard to do without modern tools, but i guess my second time will be alot better. here is the pic:

@FF_Redux i remember you always wanted to make pasta from scratch, if you got question, just answer or maybe you already did it.

the ingredients are just flour, selomina flour should be easy to find very cheap. i bought it online for around 3 USD / 1 kg. it makes the dough more elastic, instead of just regular flour which ended up being just a noodle.

kneading manually is really tough because the dough get rubbery, but the end result is great. it will be better imo, if i can press it wider and thinner.

as for the topping i literally just used scraps. some cherry tomato, baby corn, smoked ham. stir fry with olive oil and i use plain greek yogurt instead of cream. sprinkle grated parmesan and done

it is better, and i feel a properly home made pasta will be even better. the consistency and elasticity is sooo much different.

with dry strore pasta, you usually bite into it, and not much texture and resistance. with home pasta there is a bit of chewyness, like gums, but it is not too tough. it goes like "snap" kinda how rubber band snaps when cut.

a bit salty, but it is because i boil it with some salt.

the dough itself is mostly unflavored, but there is a little hint of savory-ness. after boiling the pasta itself taste pretty great. a bit salty, a bit savory and the texture is great.

Ok. Yeah, I've made my own pasta once. I used wheat and durum wheat flours (mostly durum) and egg. I also used a pasta machine. I kneaded the dough at least 15 minutes.

It was quite tasty and the texture was good, but it can be improved. I felt it got a bit too dry at times, and it was hard to get the pasta noodles whole.

Either way I made this:
