I work at Whole Foods, so what I say has no bearing on working at an Amazon facility(Whole Foods is still largely its own thing).
As for working for Whole Foods, well, youre working in a grocery store, and although management pretends Whole Foods is some sort of special snowflake, its mostly the same as other grocery stores in terms of work and work environment. How strictly rules are enforced varies according to whose enforcing them. For example, at my store, cashiers arent supposed to have anything other than water at their registers, but only the department manager actually enforces that rule.
The big difference is compensation: Whole Foods pays better than most other stores(potentially a lot better, depending on your state) and offers benefits such as paid time off and health insurance that isnt total trash(its still not great, mind you) and you can get an IRA.

I work at a sort center, and its pretty brainless work. Sometimes you gotta move fast, but if you work smart you don't have to nearly hustle as much as other people. I'm not talking about "smartly" doing the bare minimum to not get fired. But working more efficiently to get the same amount done as other people with minimal effort. Amazon hires some of the worst associates. Due to the no interview required, and easy drug test.

I can only report what I've heard second/third hand. Worked with a manager who always complained about her husbands conditions at an amazon warehouse. It sounded like there was no flexibility to his schedule at all or he was at risk of getting fired. So she was always rushed and hurried, and at times had to bring in her 8 month old kid because otherwise he might have been 5 minutes late.

Again, 15 an hour is double the federal minimum. I think less then 5 states currently have a minimum wage that high.

People quit amazon often. Either because they hate it or they found decent enough pay without the elsewhere without the bs of working in an Amazon warehouse.

Depends on how they do the check. I think a lot of businesses wait until they have a certain number, then send them off to do at once. Recently had an interview at meijer, and it took about 11 days until they got to me and let me know the background check was completed.
