Stormtrooper XR-9708 picked up a parasite on Seynolia VI prior to being stationed on the Death Star, and he passed it after a hard number two. The garbage compactor also doubles as a septic tank. The passed parasite thrived on exposure to radiation and grew vastly after being passed.

Ignoring what's been made up to explain it, in reality, Lucas wrote them to be on Alderan for that scene, where it wouldn't be odd for something living to get into the trash system looking for food. It was rewritten to have them on the Death star, so that became something that didn't make sense. Right up there with why human sized garbage chutes were in the detention area.
