I'd say 2/3 of your mission idea minus the offscreen stuff. Have her essentially "live" until the end with perhaps a concluding epilogue or something akin to her "appearance" in Rogue One. Maybe she reunites with Ghost Luke before living out the remaining years of her life in peace somehow? I mean, there's not many creative options to work around the restrictions but at least that would be a sentimental arc finale. It's possible she could get phased out offscreen altogether since there's been barely any press or anticipation concerning her fate.
