I'm playing on a fairly new build (ryzen 2600, rtx 2070, 1440p 144hz monitor) and was wondering if any of the ENBs or texture enhancements are worth the effort, or if there are any quality of life mods that are needed (like the unofficial skyrim patch).

I'll be honest, I'm a bit lazy to find my old nexus account and get the mod manager and set all that shit up, so if vanilla is good enough on it's own I'm for it.

You'll be fine on your own. The only one that I'd really push for is the one that lowers the glow on your enchanted weapons (on the Nexus it is called "Don't Blind Me"), which may or may not have been addressed in a patch since then. Doesn't look like the major mods have been updated in ~3 years.
