So the gpu in my PS3 crapped out this weekend (probably decided death was better than playing fate of the furious) and I'm bummed because it's a fat 60gb that is PS1/2/3 compatible.

Found a video that shows how to apply new thermal paste to the gpu but the problem is I've never done anything like this. I helped my dad build a computer like 20 years ago but that was pretty plug and play.

Am I being over confident or is this something I could probably do? Worst case scenario the system is borked (which it already is) and best case I have my PS3 back!

Has all the same symptoms. Screen glitches out and it looks like the matrix. Once the system cools it boots up fine but quickly overheats and the screen goes wonky again.

I see. It looks pretty straightforward to do based youtube videos. Arctic Silver is cheap, so at least if that doesn't fix it you won't be out much.

Replacing or applying thermal paste is one of the easiest things you can do in terms of working on computers. Just don't get any on the mother board or apply too much (so that when the chip and cooling unit together are pushed together that it pushes some out onto the motherboard) and you'll be fine.
