Once could have bit the temptation, as in they fell to it, allowed themselves to be tempted, but I have never heard that phrasing before.

So if I was tempted to eat a whole bag of chips, but I decided not to through willpower, that would be beating the temptation.

The temptation in this case being eating a bag of chips.

By beating the temptation, I did not eat the bag of chips.
