there is still one more card to come. If he gets that card the odds will flip and he can win. So he has a 0% chance at the moment, but that card has a 5% chance of showing up and helping him or fucking him over even more. Then there is always the chance his opponent could fold.

The other guy could call a hand other than a straight, but its not likely, so only 95%

This actually doesn't make sense because there is no card on the river that can allow Hellmuth to win against Ivey's straight. Usually when they predict percentage on telecasts it's the strength of the hand, probably of the player calling/folding isn't calculated into that.

I'm assuming it's a simple mess up. Because from a pure card standpoint Ivey has him

If the last card was an 8 they would both have a straight.

Also since we're not seeing the full round did any of the other players fold an 8?

This. So its a 95% chance Ivey will win, and a 5% chance an 8 will come out, in which case they split the pot. There is a 0% chance Hellmuth can win outright.
