I don't think its stated he is unkillable. However, he basically is. Nothing in the series has ever hurt him. Even when he let them attack him.

Yeah, even discounting the point that he moves so fast that he can basically teleport out of the way of anything, he actually took a ton of physical abuse in the series that would kill a normal man, with zero ill effects on him.

Heres how i imagine it going

Goku confronts him and tells him not to hold back

Saitama holds back and give a half hearted punch that sends goku flying through a mountain

Saitama is disappointed and starts walking away.

Goku gets up and goes super sayian.

Saitama is slightly amused he survived. He lets SS Goku go all out on him, barely dodging and even letting himself get hit a few times to see how strong he is.

Goku fucks up a majority of the area they are fighting in with ki attacks and throwing Saitama around.

One final big attack send Saitama into the ground.

Goku remarks how tough Saitama is as he rises from the rubble with barely any damage.

Goku goes SSGSS and readys another assault and Saitama just smiles like a moron staring into the sun.

Before Goku lands the hit Saitama serious punches goku nearly into space.

Goku survives but is visibly injured. He flys back down and prepares to give it everything he has as he taps into some next level hybrid shit SSGSS Ultra Instinct Kaioken X10 Ultimate form.

He unloads everything he has into Saitama. And even dodges all counter attacks.

Half of the planet is destroyed or damaged before he releases his strongest kamehameha ever into Saitama who simply punches through it with a Death Punch and liquefies Goku.

Fight over Saitama walks away still bored and Goku is gone.

No. That goes against Goku's character. He doesn't win because he can't lose. He wins because of what's at stake if he loses. If there's just a for-fun fight with no real consequences for losing, Goku won't magically power up to a place where he can win.

In terms of what we've seen Saitama do, Goku easy. The question is how high Saitama is going to scale. He might have literal infinite potential if the limit breaker thing is actually true about him. Full power Saitama could be anywhere from planet buster to reality shattering for all we know.

Well, Goku would need a reason to fight Saitama seriously (like life on the line serious).

He'll get his ass handed to him, and comment on how strong Saitama is.

Then he'll learn his secret and do the same training since he wants to be stronger.

They become friends and eat a shit ton of food.

Goku becomes as strong as Saitama and the two can never win against each other but now Goku becomes bored of fighting and just ends the series there.

The key word there is "can," which is the heart of the gag. Saitama, when putting in an appropriate amount of effort, defeats anyone and anything in one punch.
