I would think "less technology" would make for a better wild west experience. The wild west was practically dead during RDR.

I just feel like GTA is essentially Life: The Game so even when they jumped to earlier decades there was always more facets of American life they could add.

The Henry Rifle(lever action) was designed in 1860, and released soon after. Double action pistols(1 pull of the trigger pulls back the hammer, rotates the cylinder,and released the hammer) were first invented in the 1850's. The game tales place in 1899, (according to wikipedia).
