i forget what it's called specifically
but it's the same meat

boneless pork chops have more processing and so are more expensive per pound

if you get the pork roast, you can just slice off however many pork chops you want, it'll spoil slower, and you're also paying WAY less for way more meat

all for just about 25 more seconds added to your prep time

That's generally an issue with overcooking
Pork is kinda finicky that way, it can be hard to reach a sweet spot

especially the more leaner regions, like that of the boneless pork chops grocery stores provide

that's why you should get a meat thermometer and just measure the temperature since that's all you need for pork
